Rice is such an important staple in China, that a traditional Chinese greeting is "chi fan le mei you," which means "have you had rice yet?" It's a social equivalent to our "what's new" or "how's it going?".

Boil chicken in water for about 5-10 minutes so it makes peeling the skin and stripping the meat off the bone easier. I like to get some rice ready before I get in the shower after the gym. My other food is ready in advance since I am a busy professional. I have to cook my rice fresh.
